Chicken Sauté
- 1 lb. Chicken Breast, cubed
- 3 T. Oil (any kind)
- 1 Onion, finely chopped
- 2 cloves Garlic, crushed
- 1 Sweet Red Pepper, chopped
- 1 Green Bell Pepper, chopped
- 2 Tomatoes, chopped
- 1 T. Tomato Paste
- ½ c. Water
- ¼ tsp. Black Pepper
- ½ tsp. Salt
- ½ tsp. Red Pepper
- Heat Oil in a frying pan and add the Chicken pieces. Cover with lid.
- As the Chicken starts to cook, add the Onion and Garlic. Keep covered while cooking, but remove lid to stir often to avoid sticking.
- When Chicken is cooked, add chopped Peppers & Tomatoes. Cover and continue cooking until everything is soft and bubbly.
- Add Tomato Paste, Water & Spices. Cover and allow to simmer until flavors blend fully. (At least 5 minutes if you are in a rush to eat.)
- Chicken Sauté is ready to serve immediately. Best served on a bed of Rice Pilaf.
