Meatballs & Veggies
Meatball Ingredients:
- 2 pounds Ground Beef
- ½ c. Onion, finely diced
- 1 Egg
- ¼ c. Bread Crumbs
- 2 Cloves Garlic, crushed
- 3 sprigs Flat-Leaf Parsley, chopped
- ¼ tsp. Black Pepper
- ¼ tsp. Red Pepper Flakes
- ½ tsp. Cumin
- ½ tsp. Salt
- ½ tsp. Paprika
Veggie Ingredients:
- 3 Carrots
- 4 Potatoes
- 1 Eggplant
- 1 Red Bell Pepper
- 1 Green Bell Pepper
- 1-2 Onions
- 6 cloves Garlic, sliced
- ¼ c. Olive Oil
- 3 sprigs Flat-Leaf Parsley, chopped
Sauce Ingredients:
- 2 c. Tomato Sauce
- ½ c. Water
- ½ tsp. Salt
- ¼ tsp. Black Pepper
- 1 tsp. Red Pepper Flakes
- ½ tsp. Basil
- ½ tsp. Oregano
- ½ tsp. Thyme
- To prepare Meatballs: mix all ingredients together, and use your hands to knead until thoroughly mixed. Cover with plastic wrap and refrigerate for ½ hour to allow flavors to blend.
- To prepare Veggies: wash and peel Carrots, Potatoes and Eggplant. Cut into bite-sized chunks.
- Wash and deseed Bell Peppers. Cut into bite-sized chunks. Place all Veggie chunks into a large casserole dish and mix.
- Slice Garlic cloves, and scatter on top of Veggies.
- Wash and chop Parsley. Sprinkle on top of Veggies.
- Pour Olive Oil on top of Veggies.
- Bake at 400oF for 45 minutes.
- Meanwhile mix together Sauce ingredients and set aside.
- Roll Meat mixture into walnut-sized balls. Place raw Meatballs on top of Veggies.
- Pour Sauce on top of Meatballs and Veggies. Cover and bake another 45 minutes.
- Uncover and bake an additional 10 minutes. Internal temperature of Meatballs should read 160oF and Veggies should be tender.
- Serve hot on a bed of Rice Pilaf, garnished with Cacık Sauce.
