Mosaic Cake

Easy Chocolate & Graham Cracker Cake 

  • 1 c. Milk
  • 1/3 c. Sugar
  • 3 T. Butter, melted
  • 3 T. Cocoa
  • 1 c. Chopped Walnuts, or your choice of nuts
  • 10 ounces Graham Crackers*

 

  1. In a medium bowl, whisk together Milk, Sugar, Butter & Cocoa.
  2. Mix in Chopped Nuts.
  3. Break up the Crackers into the mixture. Use a rubber spatula to gently blend everything together. Mixture will be lumpy but completely covered in chocolate.
  4. Line a loaf pan with plastic wrap, leaving some hang over the sides. Scoop the mixture into the lined pan. Place another layer of plastic wrap on top of the mixture and press down firmly. Seal the sides of the plastic wrap and press the loaf into shape until firm and smooth.
  5. Place in freezer for 3 hours to chill completely.
  6. After removing, allow to thaw slightly before unwrapping from the plastic wrap. Turn loaf out onto a nice platter and serve. Or cut into slices and serve individually.

* In Turkey we use Petibör bisküvi (Petit Beurre crackers). If you can’t find them where you live something like Graham Crackers in the US work just fine.

Below is a picture as I began to gently mix the crackers into the chocolate mixture

After scooping the mixture into a lined loaf pan it will be very lumpy with lots of holes. It’s important to cover with plastic wrap also, wrap until completely sealed and firmly press into shape

As you can see in the picture below, it the loaf will remain in the exact same share as you pressed it into before freezing. Therefore, it’s very important to make the shape look as smooth and nice as possible before freezing.

Simply slice and serve. Enjoy!
