Lentil & Veggie Stew

Healthy & Easy Vegetarian Meal 

  • 1 ½ c. Brown Lentils (soak ahead of time!)
  • ¼ c. Olive Oil
  • 1 Onion, diced
  • 1 Potato, diced
  • 3 Carrots, diced
  • 1 Clove Garlic, crushed
  • 1 T. Tomato Paste
  • 1 tsp. Salt
  • ¼ tsp. Black Pepper
  • ½ tsp. Cumin
  • ½ tsp. Paprika
  • ¼ tsp. Red Pepper Flakes
  • 5-6 c. Hot Water

 

  1. Soak the Lentils overnight or on the same day for at least 3 hours. (Use 2-3 times the amount of water as lentils so they don’t get dry.)
  2. In a deep pan, sauté Onions and Oil.
  3. Add Garlic, Potatoes & Carrots. Cook 2 minutes
  4. Drain the Lentils (dispose of water). Add Lentils to the pan and cook 2 minutes.
  5. Add Seasonings & Hot Water. Cook until soft, approximately ½ hour.
  6. Serve hot: by itself in a bowl, on a bed of Rice Pilaf or Lentil & Bulgar Pilaf, or alongside noodles.

    Good question. I estimate about 5 portions. I served it with the Lentil & Bulgar Pilaf which made for a lot of lentils, but also a very easy and healthy meal!
