Healthy Cabbage Soup 

  • 1 head Cabbage
  • 2 T. Olive Oil
  • 1 T. Butter
  • 1 ½ Onions, diced
  • 1/3 c. Flour
  • 7 c. Hot Chicken Broth (or water & bullion)
  • 3 Carrots, grated
  • 1 tsp. Red Pepper Flakes
  • ½ tsp. Salt
  • ¼ tsp Black Pepper
  • ½ tsp Dillweed or ½ bunch Fresh Dill, chopped

 

  1. Remove the core of the Cabbage & wash well. Chop the head into small, bite-sized pieces & set aside.
  2. Heat Oil & Butter in a large soup pot. Add Onions and sauté.
  3. Whisk in flour and cook until bubbly.
  4. Pour in Broth (or water & bullion). Cook until boiling.
  5. Mix in Carrots & Cabbage. Bring to a boil.
  6. Add Seasonings, then reduce heat and simmer for 30 minutes.

* This soup is surprisingly flavorful and delicious as well as being super healthy and known as the perfect diet food.
