Healthy Cabbage Soup
- 1 head Cabbage
- 2 T. Olive Oil
- 1 T. Butter
- 1 ½ Onions, diced
- 1/3 c. Flour
- 7 c. Hot Chicken Broth (or water & bullion)
- 3 Carrots, grated
- 1 tsp. Red Pepper Flakes
- ½ tsp. Salt
- ¼ tsp Black Pepper
- ½ tsp Dillweed or ½ bunch Fresh Dill, chopped
- Remove the core of the Cabbage & wash well. Chop the head into small, bite-sized pieces & set aside.
- Heat Oil & Butter in a large soup pot. Add Onions and sauté.
- Whisk in flour and cook until bubbly.
- Pour in Broth (or water & bullion). Cook until boiling.
- Mix in Carrots & Cabbage. Bring to a boil.
- Add Seasonings, then reduce heat and simmer for 30 minutes.
* This soup is surprisingly flavorful and delicious as well as being super healthy and known as the perfect diet food.
