Turkish Bulgur Salad

  • 2 c. Bulgur
  • 5 Green Onions, chopped
  • 1 Tomato, chopped
  • 1 Green Bell Pepper, chopped
  • 1 Cucumber, chopped
  • ¼ c. Flat-leaf Parsley, chopped
  • 3 T. Sweet Red Pepper Paste
  • 1 T. Tomato Paste
  • 1 ½ tsp. Red Pepper Flakes
  • ¾ tsp. Cumin
  • Salt & Pepper to taste
  • 1 Lemon, juiced

 

  1. Cover Bulgur with boiling water. Set aside to let rest for 15 minutes.
  2. In a separate bowl, prepare veggies and mix together.
  3. Mix in Pastes, Seasonings and Lemon juice to taste.
  4. Drain any excess water from expanded Bulgur. Squeeze to dry.
  5. Add Bulgur to veggie mixture and stir well enough to blend all flavors.
  6. Salad is ready to serve immediately. If you wish to chill it or just leave it sit to allow flavors blend more that’s ok too.

    I don’t often like cold salads that have rice or lentils or other such things in it, but I find this one absolutely delicious! The nice thing is, not only is it yummy, it’s also quite healthy and can be a light meal, a colorful dish in among a feast, or a great party food!

    YUM! I loved this salad! Very easy to make, delicious, and healthy 🙂 Great salad to bring to a potluck or to eat anytime really.

    It must be a very forgiving recipe too because it turned out well even though I substituted the sweet red pepper paste for more tomato paste. And I accidentally added way more than the recipe called for, haha.
