Hummus

A Garlicy Chickpea Dip

  • 30 oz. Canned Chickpeas, save juice
  • ¼ c. Tahini Paste
  • ¼ c. Lemon Juice
  • 2-3 cloves Garlic, crushed
  • 2 T. Olive Oil
  • 2 T. Sweet Pepper Paste (optional)
  • Cumin
  • Paprika

 

  1. Drain the Chickpeas but reserve the juice.
  2. In a blender or food processor add ½ amount all ingredients except seasonings; blend well. (While blending, add small amounts of chickpea juice to thin the dip as desired.)
  3. Once smooth add remaining amounts of same ingredients; blend until smooth.
  4. Garnish with cumin and paprika.
  5. Refrigerate to chill fully before serving.
  6. Serve with pita bread or raw veggies.

    This is by far my favorite recipe for hummus! I’ve even served this to people who don’t care for hummus and they helped themselves to seconds and thirds. My friend once served sandwiches with hummus on it (instead of butter or mayonnaise, etc.) and it really gave it a nice flair. This is delicious with crackers or bread. And eating with vegetables makes a delicious and healthy snack!
