Gluten-Free Carrot Cake

Healthy Carrot, Walnut, Gluten-Free Dessert 

  • 1 c. Gluten-Free Flour
  • ½ c. Sugar
  • 2 tsp. Baking Powder
  • 2 tsp. Cinnamon
  • 3 Eggs
  • ½ c. Oil
  • 3 Carrots, grated
  • 1/3 c. Walnuts, chopped

 

  1. Mix together Flour, Sugar, Baking Powder and Cinnamon.
  2. Stir in Eggs and Oil.
  3. Fold in Carrots and Walnuts.
  4. Pour batter into a greased 9 or 10 inch cake pan.
  5. Bake at 350oF for 30 minutes.
  6. Allow to cool, then cut into pieces and sprinkle powdered sugar on top before serving.
