Healthy Carrot, Walnut, Gluten-Free Dessert
- 1 c. Gluten-Free Flour
- ½ c. Sugar
- 2 tsp. Baking Powder
- 2 tsp. Cinnamon
- 3 Eggs
- ½ c. Oil
- 3 Carrots, grated
- 1/3 c. Walnuts, chopped
- Mix together Flour, Sugar, Baking Powder and Cinnamon.
- Stir in Eggs and Oil.
- Fold in Carrots and Walnuts.
- Pour batter into a greased 9 or 10 inch cake pan.
- Bake at 350oF for 30 minutes.
- Allow to cool, then cut into pieces and sprinkle powdered sugar on top before serving.
