Chicken Shish Kebabs

Grilled Chicken on a Skewer 

  • 2 ½ lb. Chicken Breast or Thighs, cubed
  • ½ tsp. Salt
  • ½ tsp. Black Pepper
  • 1 clove Garlic, crushed
  • ½ T. Red Pepper Flakes
  • ½ T. Mustard
  • Few drops of Lemon Juice
  • 3 oz. Tomato Paste
  • 10 oz. Plain Yogurt
  • 1 Onion, chopped
  • ½ tsp. Thyme
  • Other raw veggies if desired (step #4)

 

  1. In a large bowl, mix together all ingredients except Chicken.
  2. Add Chicken to mixture. Use your hands to mix well and generously coat the Chicken.
  3. Cover and let marinate in the refrigerator for several hours to allow flavors to blend.
  4. On long heavy skewers stick the meat and whatever other vegetables you would like to add. (Typically I add chunks of raw onion, tomato, and peppers.)
  5. Grill or bake in the oven until fully cooked.
  6. Serve kebabs in a fresh Pide or on a bed of Rice Pilaf.

    Tried this recipe this weekend, and it was fabulous. I was worried it would be too dry after my grilling, but it was perfectly moist. I even modified using a non-dairy yogurt, so my son could enjoy. It got rave reviews. Thanks for sharing!
