Bulgur Pilaf

This flavorful recipe is a healthy alternative to serving rice

  • 1/3 c. Olive Oil
  • 1 Onion, finely chopped
  • 1 Bell Green Pepper, finely chopped
  • 1 Sweet Red Pepper, finely chopped
  • 1 T. Sweet Red Pepper Paste
  • 1 T. Tomato Paste
  • 1 Large Tomato, diced
  • 1 ½ c. Boiling Water
  • 1 c. coarse Bulgur, rinsed and drained
  • 1 T. Salt
  • Dry Mint
  • Red Pepper Flakes

 

  1. Sauté Onions in Olive Oil for about 2 minutes.
  2. Add Green and Red Peppers and let simmer until they start to soften, and Onions become translucent.
  3. Stir in Tomato Paste and Red Pepper Paste.
  4. Add diced Tomato and simmer for a few more minutes.
  5. Add Bulgur. Stir to coat well.
  6. Add Salt and Boiling Water.  Simmer covered for 15 min, or until water evaporates, stirring occasionally.
  7. Generously season with Mint & Red Pepper Flakes, mix and set aside covered for 15-20 minutes.

    This has quickly become one of my favorites. For a lighter meal I will eat just this with some plain yogurt. I like eating rice, but have found that bulgur (cooked this way) is quite tasty and much healthier.
