This flavorful recipe is a healthy alternative to serving rice
- 1/3 c. Olive Oil
- 1 Onion, finely chopped
- 1 Bell Green Pepper, finely chopped
- 1 Sweet Red Pepper, finely chopped
- 1 T. Sweet Red Pepper Paste
- 1 T. Tomato Paste
- 1 Large Tomato, diced
- 1 ½ c. Boiling Water
- 1 c. coarse Bulgur, rinsed and drained
- 1 T. Salt
- Dry Mint
- Red Pepper Flakes
- Sauté Onions in Olive Oil for about 2 minutes.
- Add Green and Red Peppers and let simmer until they start to soften, and Onions become translucent.
- Stir in Tomato Paste and Red Pepper Paste.
- Add diced Tomato and simmer for a few more minutes.
- Add Bulgur. Stir to coat well.
- Add Salt and Boiling Water. Simmer covered for 15 min, or until water evaporates, stirring occasionally.
- Generously season with Mint & Red Pepper Flakes, mix and set aside covered for 15-20 minutes.

This has quickly become one of my favorites. For a lighter meal I will eat just this with some plain yogurt. I like eating rice, but have found that bulgur (cooked this way) is quite tasty and much healthier.
