Turkish Chocolate Coffee Cake
Ingredients:
- 2 Eggs
- ½ c. Sugar
- 1 ½ tsp. Vanilla
- ¾ c. Flour
- 3 heaping T. Cocoa
- ½ tsp. Turkish Coffee (just the granules, not brewed)
- 1 ½ tsp. Baking Powder
- 2 T. Milk
- 1 c. Milk for topping
- ¼ c. Sugar for topping
- ¼ tsp. Turkish Coffee for topping
- 1 oz. Bittersweet Baker’s Chocolate
Directions:
- Beat Eggs and Sugar on high speed with mixer until frothy.
- Whisk in Vanilla.
- In separate bowl, mix together Flour, Cocoa, Turkish Coffee and Baking Powder, then whisk mixture into batter until just mixed.
- Mix in 2 T. Milk.
- Pour batter into a greased 8×8-inch baking dish.
- Bake at 350o for 20 minutes or until a toothpick inserted in the middle comes out clean.
- Allow the cake to cool for 10 minutes before cutting into 9 pieces.
- In a small pot over low heat whisk together Milk, Sugar and Coffee for topping until warm but not boiling.
- Cut up Chocolate and add to the mixture.
- Continue whisking over low heat until melted.
- Pour on top of cake.
- Allow to stand for at least half an hour so the topping soaks in completely, then it is ready to serve or you can refrigerate to serve later.
