Chicken Bulgar Dish
Ingredients:
- 1 ½ c. cooked Chicken Pieces
- 1 Onion, diced
- Olive Oil
- 2 c. Bulgar, rinsed
- 3 c. Hot Water (or chicken stock)
- 1 Sweet Red Pepper
- 1 small Green Bell Pepper
- 2 Tomatoes, diced
- ½ tsp. Salt
- ¼ tsp. Black Pepper
- ¼ tsp. Red Pepper Flakes
- ¼ tsp. Cumin
- ¼ tsp. Oregano
- Pinch of Dried Mint Flakes
- 1 T. Tomato Paste
- 1 T. Sweet Red Pepper Paste (optional)
- 1 T. Butter
Directions:
- Prepare Chicken: bake a whole Chicken in the oven until fully cooked and tender then pull off the pieces (you will have extra) or boil Chicken Breasts. Reserve the broth to use instead of water in this recipe which will give more flavor and nutrients.
- Sauté Onion in Olive Oil.
- Add Peppers sauté for 2 minutes.
- Sauté diced Tomatoes for 2 minutes.
- Stir in Butter and Tomato Paste.
- Add Spices and Broth/Water. Bring to a boil.
- Stir in rinsed Bulgar and Chicken.
- Cook 30 minutes, stirring occasionally to avoid sticking.
Step 4: Adding Tomatoes to sauteed Peppers and Onions
Ready to serve
