Cheesy Fried Potatoes

  • 4 Potatoes
  • 2 Eggs
  • 2 T. Corn Meal
  • ½ tsp. Salt (or more to taste)
  • 2 dashes Black Pepper
  • 2 dashes Red Pepper Flakes
  • 2 T. Oil
  • ½-1 c. Shredded Mozzarella Cheese

  1. After washing Potatoes well, peel and grate.
  2. Squeeze excess water from raw grated Potatoes and place in a medium-sized mixing bowl.
  3. Use your hands to mix in Eggs, Corn Meal, and Seasonings.
  4. Heat Oil in a non-stick frying pan.
  5. Spread ½ of the Potato mixture as a bottom layer in the heated pan.
  6. Quickly top with grated Cheese, making sure to avoid the edges.
  7. Spread the rest of the Potato mixture as the top layer. Make sure that all of the Cheese is covered in the middle layer (any sticking out will stick to the pan and create a mess).
  8. Cover the pan with a lid and allow to fry on medium heat for 10 minutes.
  9. When you remove the lid (use a pot holder or towel so you don’t burn your arm during the flipping process) if the top layer looks like it has begun to soften then the bottom layer has probably fried to a nice golden brown and is ready to be flipped. Hold the lid upside down in one hand and using the handle of the pan flip the partially fried Potato cake into the lid of the pan. Then simply slide the Potato cake into the pan so that the unfried side has a chance to cook.
  10. Replace the lid and time another 6-8 minutes. Use the same flipping method to turn the Potato cake onto serving plate.
  11. Serve immediately while still hot.

Step 6: place cheese as the middle layer, avoid edges

Spread top layer of grated potato mixture on top, making sure no cheese is exposed
