Sweet Custard 

  • 2 c. Water
  • 2 c. Milk
  • 1 c. Sugar (or slightly less)
  • ½ c. Corn Starch
  • ½ tsp. Vanilla
  • Pomegranate, optional
  • Cinnamon, optional
  • Coconut Flakes, optional
  • Pistachios, optional

 

  1. Mix together Water, Milk, Sugar and Corn Starch. Use a wire whisk to stir constantly over low heat.
  2. When the custard begins to bubble, add the Vanilla. Continue stirring while it cooks for 2 more minutes and begins to thicken.
  3. Remove from heat and pour into (4) small bowls. Allow to cool at room temperature. (Tip: before allowing to cool I sprinkle the tops with Coconut Flakes so that when I turn them over to serve, the custard doesn’t stick to the plate.)
  4. After cooling to room temperature, refrigerate for 3 hours.
  5. After fully chilled, use a knife to gently break the custard seal along the top rim of the bowl then turn bowls over to allow the custard to drop out (or serve it in bowls).
  6. Garnish the top and sides of custard as desired. Garnish suggestions are in the ingredient list. It looks really beautiful to have the bring pink/red pop of pomegranate seeds as garnish, but unfortunately it isn’t currently the season for them so I couldn’t use any. However, the combination of cinnamon, coconut flakes and crushed pistachios made nice garnished and added a delicious taste. This custard is a very light dessert and can be enjoyed even by those who can’t have gluten.

Step 1: Mix together first four ingredients and heat while whisking constantly

When the mixture begins to bubble add the Vanilla and time for 2 minutes, keep stirring! 

(There was so much steam at this point that my camera lens kept fogging up and I couldn’t get a clear picture.)

I poured the hot custard into these 4 small, glass bowls.

Before allowing them to cool I sprinkled Coconut Flakes on top, that way when I turn them upside down to serve the bottom of the custard (the top here) won’t stick to the plate.

I took this dessert to a friend’s home so just garnished the custard in the bowls because it was easier to transport that way

Of course I had to save one to flip out of the bowl and decorate nicely

And of course I had to taste it… delicious!
