Colorful Potato Salad with Veggies
- 6 Potatoes
- 1 Small Head Curly Leaf Lettuce, chopped
- 1 Tomato, diced
- 1 Cucumber, diced
- 1 T. Flat-Leaf Parsley, chopped
- 1 T. Green Onion, chopped
- 1 Lemon, juiced
- 2 tsp. Red Pepper Flakes
- 3 T. Olive Oil
- Salt to taste
- Peel and par-boil Potatoes, drain and set aside to cool.
- In a separate bowl, combine remaining ingredients.
- Gently stir in Potatoes.
- Refrigerate to chill fully before serving.
