Potato Sausage Stir-fry

Ingredients:

  • Frying Oil
  • 7 oz. Smoked Sausage
  • 5 Potatoes, diced
  • 2 Green Bell Peppers, chunks
  • 1 Sweet Red Bell Pepper, chunks
  • ¾ tsp. Salt
  • ½ tsp. Black Pepper
  • ½ tsp. Red Pepper Flakes

Directions:

  1. Fry Potatoes in Oil (use plenty of oil over high heat).
  2. When Potatoes are done, put on a plate with paper towel to drain excess oil.
  3. Cut Sausage into coins, then cut coins in half.
  4. Fry Sausage pieces in Oil until they start to crisp.
  5. Add Peppers and fry until tender.
  6. Add Potatoes and Seasonings. Mix together well.
