Flavorful fried Tomato & Egg patties reminisent of the Ottoman Era
- 2 Tomatoes
- 10 Fresh Mint Leaves, chopped
- ½ tsp. Salt
- ¼ tsp. Black Pepper
- 4 Eggs
- 4 Slices Bread
- 2 cloves Garlic, crushed
- ¼ c. Tomato Sauce
- Dash of Red Pepper Flakes
- Olive Oil
- Peel, seed and dice Tomatoes and place in bowl.
- Add chopped Mint Leaves, Salt and Black Pepper.
- Mix in Eggs.
- Tear Bread into small pieces. Add to mixture.
- Lightly coat bottom of frying pan with Olive Oil.
- Form patties from mixture and put into frying pan.
- After a frying for a few minutes, flip patties and fry opposite side.
- Put on serving plate (or on paper towel to catch grease drips).
- Add a bit more Oil to empty frying pan along with remaining ingredients.
- Heat until bubbly and drizzle on top of patties.

From the picture and the ingredients I was a bit hesitant to try this – especially because I’m not a huge fan of tomatoes! But it was absolutely delicious! I highly recommend it!
