Tomato & Egg Patties

Flavorful fried Tomato & Egg patties reminisent of the Ottoman Era

  • 2 Tomatoes
  • 10 Fresh Mint Leaves, chopped
  • ½ tsp. Salt
  • ¼ tsp. Black Pepper
  • 4 Eggs
  • 4 Slices Bread
  • 2 cloves Garlic, crushed
  • ¼ c. Tomato Sauce
  • Dash of Red Pepper Flakes
  • Olive Oil

 

  1. Peel, seed and dice Tomatoes and place in bowl.
  2. Add chopped Mint Leaves, Salt and Black Pepper.
  3. Mix in Eggs.
  4. Tear Bread into small pieces. Add to mixture.
  5. Lightly coat bottom of frying pan with Olive Oil.
  6. Form patties from mixture and put into frying pan.
  7. After a frying for a few minutes, flip patties and fry opposite side.
  8. Put on serving plate (or on paper towel to catch grease drips).
  9. Add a bit more Oil to empty frying pan along with remaining ingredients.
  10. Heat until bubbly and drizzle on top of patties.

    From the picture and the ingredients I was a bit hesitant to try this – especially because I’m not a huge fan of tomatoes! But it was absolutely delicious! I highly recommend it!
