Bulgar Pilaf with Chickpeas

Ingredients:

  • 3. T. Oil
  • 1 T. Butter
  • 2 c. Coarse Bulgar, washed & drained
  • 1 c. canned Chickpeas, drained
  • 1 tsp. Salt
  • 3 c. Chicken Broth, hot
  • 1 c. Hot Water

 

Directions:

  1. Heat Oil & Butter in a pan until hot.
  2. Stir in Bulgar (be careful to avoid splatters because of water). Sauté for a few minutes.
  3. Add Chickpeas and Salt. Continue to sauté for 2 minutes.
  4. Stir in Chicken Broth and Water. Cover and bring to a boil.
  5. Once it begins to boil reduce heat to a simmer until Bulgar is soft, about 15 minutes. Stir occasionally.
  6. Once soft, remove from heat but leave covered to sit for 15 minutes. Place a paper towel between the pot and lid to absorb some of the moisture.
