Bulgar Pilaf with Chickpeas
Ingredients:
- 3. T. Oil
- 1 T. Butter
- 2 c. Coarse Bulgar, washed & drained
- 1 c. canned Chickpeas, drained
- 1 tsp. Salt
- 3 c. Chicken Broth, hot
- 1 c. Hot Water
Directions:
- Heat Oil & Butter in a pan until hot.
- Stir in Bulgar (be careful to avoid splatters because of water). Sauté for a few minutes.
- Add Chickpeas and Salt. Continue to sauté for 2 minutes.
- Stir in Chicken Broth and Water. Cover and bring to a boil.
- Once it begins to boil reduce heat to a simmer until Bulgar is soft, about 15 minutes. Stir occasionally.
- Once soft, remove from heat but leave covered to sit for 15 minutes. Place a paper towel between the pot and lid to absorb some of the moisture.
