Fig & Custard Cake
Cake Ingredients:
- 7 Dried Figs
- 3 Eggs
- 1 c. Sugar
- 1 c. Flour
- 1 T. Baking Powder
- ½ tsp. Cinnamon
- 2 tsp. Vanilla
- 1 c. Chopped Walnuts
Syrup Ingredients for Baked Cake:
- 1 ½ c. Warm Water
- 1 ½ tsp. Instant Coffee Granules
- 1 ½ tsp. Sugar
Custard Ingredients:
- 3 c. Milk
- 2 heaping T. Cornstarch
- 2 heaping T. Flour
- 5 T. Sugar
- 1 heaping T. Shredded Coconut Flakes
- 1 T. Butter, melted
- 1 tsp. Vanilla
Optional Garnish Ingredients:
- Walnuts, halved or chopped
- Shredded Coconut Flakes
- Dried Figs, sliced or chopped
Directions:
- Place Figs in a bowl, and add hot water until covered. Soak for 10 minutes, remove Figs from water and pat dry with a towel. Dice softened Figs (very small) and set aside.
- Beat Eggs and Sugar until frothy.
- Whisk in Flour, Baking Powder and Cinnamon. (Do NOT overmix.)
- Stir in Vanilla, Walnuts, and the diced Figs you set aside earlier.
- Pour batter into a greased 9×13-inch pan.
- Bake at 340oF for 30-35 minutes until a toothpick comes out clean when stuck in the middle.
- While the cake is baking: mix Warm Water, Coffee and Sugar to make a syrup. Set aside.
- Once the cake is finished baking, allow to stand for 5 minutes. Then pour the syrup mixture evenly over the baked cake (which was prepared in step #7).
- To prepare the custard: whisk Milk, Corn Starch, Flour and Sugar in a pot on the stove over medium heat. Stir constantly until thickened.
- Remove from heat and immediately whisk in Coconut, Butter and Vanilla. Set aside to cool completely (however, you will want to stir it from time to time as it cools to prevent a film forming on top of the mixture.)
- Once the cake has fully soaked in the syrup and the custard is fully cooled: spread the custard on top of the cake.
- Sprinkle with Coconut.
- Refrigerate for at least 2 hours or overnight.
- After removing from fridge, garnish with Walnuts and Figs as desired, just before serving.
