Meatball & Chickpea Dish
Ingredients for Meatballs:
- 1 lb. Ground Beef
- 1 Onion, grated
- 1 Egg
- ¼ c. Bread Crumbs
- 2 cloves Garlic, crushed
- ¼ tsp. Black Pepper
- ¼ tsp. Pepper
- ½ tsp. Cumin
- ½ tsp. Salt
- ½ tsp. Paprika
Ingredients for Main Dish:
- Oil
- 1 Onion, diced
- 3 cloves Garlic, crushed
- 1 tsp. Salt
- ¼ tsp. Black Pepper
- ½ tsp. Red Pepper Flakes
- 1 tsp. Oregano
- 8 Tomatoes, grated
- ¼ c. Tomato Paste
- 30 oz. Canned Chickpeas,* drained
- 5 c. Hot Water
* If using dry Chickpeas soak overnight, then drain. Add to pot with lots of water, 1 diced Onion, Salt and a Bay Leaf. Boil for at least one hour, before draining and adding to this recipe.
Directions:
- Mix the ingredients for the meatballs together and knead well. Let rest for ½ hour to allow flavors to blend.
- Roll into small meatballs about the size of a chestnut.
- Fry the meatballs in Oil until fully cooked.
- In a separate pot, sauté the Onion and Garlic.
- Add the Seasonings, Tomatoes, and Tomato Paste. Cook for 5 minutes.
- Add the Chickpeas and cook for another 5 minutes.
- Pour in the Hot Water and lightly boil for 15 minutes.
- Add the Meatballs and cook for another 15 minutes or until Chickpeas are fully cooked.
- Serve with Rice Pilaf.
