Fresh Seasonal Salad  

  • 1 head Romaine Lettuce (or any combination of Romaine, Curly, Red Leaf, etc)
  • ½ head Purple Cabbage
  • ½ bunch Roka or Watercress
  • 2 Carrots, shredded
  • ½ bunch Flat-Leaf Parsley, chopped
  • 1 bunch Spring Onions, chopped
  • 1 can Corn, drained
  • Few Radishes, sliced
  • Tomato Wedges or Cherry Tomatoes

Dressing Ingredients:

  • 1 ½ Lemons, squeezed
  • 2 ½ T. Olive Oil
  • 2 tsp. Salt
  • 1 tsp. Sumac

 

  1. Wash, dry and break Lettuce leaves into pieces. Place in large bowl.
  2. Remove outer layer of Purple Cabbage, then wash the whole head and cut in half. Remove the core and slice on of the halves. Cut into smaller pieces as desired. Add to the large bowl.
  3. Wash, dry and break Roka into pieces and add to the large bowl. Toss to mix.
  4. Mix in remaining ingredients.
  5. In a separate bowl combine all dressing ingredients and mix well. Pour over Salad and toss to mix well.

* As indicated by the title this salad is very flexible depending what is in season. Feel free to be creative and add whatever is fresh from the garden or market.
