Red Lentil Soup with Tomato
- 1 c. Onion, finely chopped
- ¼ c. Olive Oil
- ½ – 1 tsp. Red Pepper Flakes
- 1-2/3 c. Red Lentils, rinsed and drained
- 6 c. Chicken Broth
- 5 c. Tomato Juice
- ½ tsp. Salt
- ¼ tsp. Black Pepper
- Sauté Onions in Olive Oil.
- Stir in Red Pepper and Lentils. Cook for a few minutes.
- Stir in Broth & Juice; cook for a few minutes.
- Add Salt & Pepper.
- Boil for 5 mins.
- Simmer at least 1 hour.
- Blend before serving with bread and lemon wedges.
No Turkish meal is complete without an appetizer of soup. This zesty soup is a staple in every restaurant and home throughout Turkey and is perfect for any meal of the day, even breakfast! I like making a huge pot of this soup and freezing some of it for another easy meal. There are many variations of this soup. This one I learned in the Southeast province of Gaziantep.

From the moment I first tasted this dish it has been my favorite Turkish food! It is so easy to make and everyone loves it! I like to make a big batch and then freeze it in smaller containers for easy meals. It’s good by itself, but adding some sprinkles of lemon juice makes it exceptionally yummy!
