Ingredients:
- 3 Eggs
- 1 c. Sugar
- 1 Lemon
- 1 c. Milk
- 1/3 c. Oil
- 2 ½ tsp. Vanilla
- 2 ½ c. Flour
- 2 ½ tsp. Baking Powder
- Powdered Sugar for garnish
- Additional Lemon zest for garnish
Directions:
- Whisk together Eggs and Sugar.
- Grate Lemon Peel to make the zest. Juice the Lemon. Add zest and juice to Egg mixture.
- Mix in Milk, Oil and Vanilla.
- Gently stir Flour and Baking Powder into batter.
- Pour cake batter into a greased bundt pan.
- Bake at 335oF for 45 minutes.
- Remove from oven and allow to stand to cool for 15 minutes before dumping from pan.
- Sprinkle top of cake with Powdered Sugar and extra Lemon zest. (Or make a light glaze to drizzle on top of the cake before adding zest.)
