Ingredients:
- 2 pounds Ground Beef
- 1 bunch fresh Parsley, chopped
- 1 Onion, diced
- 1 tsp. Black Pepper
- 1 tsp. Red Pepper Flakes
- 1 tsp. Cumin
- ½ tsp. Oregano
- ½ tsp. Italian Seasoning
- 1 tsp. Salt
- 4 cloves Garlic, minced
- 2 Green Peppers (1 diced, 1 strips)
- 4 Potatoes
- 1 Tomato
- 2 T. Tomato Paste for the sauce
- 2 c. Water for the sauce
- ½ tsp. Salt for the sauce
- 1 T. Olive Oil for the sauce
Directions:
- Mix together Beef, Parsley, Onion, Seasonings, Garlic and 1 diced Green Pepper. Use your hands to knead until well blended. Press meat mixture into a greased 9×13 inch baking dish.
- Wash, peel and slice Potatoes (make slices thin and uniform). Arrange slices around the edges of the dish on top of the meat.
- Cut Tomato into thin wedges and remaining Green Pepper into strips. Arrange on top of meat in the middle of the dish where there are no Potatoes.
- In a separate bowl whisk together Tomato Paste and Water. Mix in Salt and Oil. Pour sauce over the entire dish (liquid should mostly cover potatoes). The dish will be very full but not overflow.
- Cover with Aluminum Foil.
- Bake at 375oF for ½ hour.
- Uncover and continue baking another ½ hour or until Potatoes are soft.
- Serve hot from the oven. Great with Rice Pilaf.
