Raisin Citrus Cake

Ingredients:

  • 3 Eggs
  • 1 c. Sugar
  • 2 tsp. Vanilla
  • 1 c. Plain Yogurt
  • 1 c. Oil
  • 1 Orange Zest (grated peel)
  • 1 Lemon Zest (grated peel)
  • 1 T. Baking Powder
  • 2 c. Flour
  • 1 c. Raisins

 

Directions:

  1. Whisk together Eggs, Sugar, and Vanilla (or use an electric mixer on high speed) until frothy.
  2. Mix in remaining ingredients, except Raisins.
  3. Lightly stir in Raisins. (It is important you do not mix raisins in with a mixer or allow to stand long in the matter as they will sink to the bottom. Use a spoon to stir them in.)
  4. Pour batter into a greased bundt cake pan.
  5. Bake at 385oF for 35-45 minutes.
  6. After removing from oven allow to stand and cool 10 minutes before dumping out of pan.
  7. Sprinkle Powdered Sugar on top of cake to garnish.
