Raisin Citrus Cake
Ingredients:
- 3 Eggs
- 1 c. Sugar
- 2 tsp. Vanilla
- 1 c. Plain Yogurt
- 1 c. Oil
- 1 Orange Zest (grated peel)
- 1 Lemon Zest (grated peel)
- 1 T. Baking Powder
- 2 c. Flour
- 1 c. Raisins
Directions:
- Whisk together Eggs, Sugar, and Vanilla (or use an electric mixer on high speed) until frothy.
- Mix in remaining ingredients, except Raisins.
- Lightly stir in Raisins. (It is important you do not mix raisins in with a mixer or allow to stand long in the matter as they will sink to the bottom. Use a spoon to stir them in.)
- Pour batter into a greased bundt cake pan.
- Bake at 385oF for 35-45 minutes.
- After removing from oven allow to stand and cool 10 minutes before dumping out of pan.
- Sprinkle Powdered Sugar on top of cake to garnish.
