Dried Fruit Cake 

  • 3 Eggs
  • 1 c. Sugar
  • 1 c. Oil (not olive)
  • 1 c. Milk
  • 1 T. Vanilla
  • 2 ½ c. Flour
  • 1 T. Baking Powder
  • ½ c. Raisins
  • ½ c. Dried Apricot pieces

 

  1. Beat together Eggs & Sugar.
  2. Mix in Oil, Milk & Vanilla.
  3. Add Flour & Baking Powder. Mix well.
  4. Stir in Dried Fruit pieces.
  5. Pour batter into a greased Bundt pan. Note: I was making 2 cakes (this recipe and a gluten-free one) at the same time. I don’t have a Bundt pan so used one 9×9-inch and one large round cake pan. They turned out just fine, but I think they would look much nicer if baked in a Bundt pan.)
  6. Bake at 350oF for 30 minutes or until a toothpick inserted in the center comes out clean.
  7. Flip the cake out of the pan and allow to cool before serving.
