Rolled Pastry stuffed with Spinach and Feta
- 1 lb. Fresh Spinach
- 1 Egg & 1 Egg Yolk
- ¾ c. Plain Yogurt
- ¼ c. Oil (any kind)
- 2 T. Olive Oil
- 1 Onion, finely chopped
- 2 Pinches of Red Pepper Flakes
- 2 Pinches of Black Pepper
- 2 Pinches of Salt
- 12 sheets Phyllo Dough*
- 16 oz. Feta Cheese
- Sesame or Nigella Seeds
* Phyllo Dough can be bought frozen, but should be thawed out to make this. However, as soon as it is exposed to the air it will begin to dry out and get brittle. It’s best to keep it in the packaging or under a slightly damp (not soggy) paper towel until the moment you use each sheet of dough.
- Wash the Spinach Leaves well, discard the stems. Leave to drip dry.
- In a small bowl, mix together 1 Egg (reserve the extra Egg Yolk for the top), Yogurt and Oil. Set aside.
- Sauté Onion in Olive Oil.
- Chop the Spinach; add to the Onions.
- Stir in the Seasonings, cover and let cook on low heat until tender.
- When Spinach mixture is slightly cooled, add to a small bowl with the Feta Cheese and mix together. Set aside.
- Spread 2 sheets of Phyllo Dough on top of each other on the counter. Carefully brush the Sauce mixture on top until fully covered with a light coat.
- Layer 2 more sheets on top (so you will have a stack of 4). Again brush lightly with Sauce, making sure to cover all edges.
- Cut in half so there will be 2 squares. Cut each square in half diagonally so there will be 4 triangles.
- Place a small log of Cheese/Spinach mixture on the edge of each triangle (not the longest side).
- Carefully fold over the corner of each end so the Cheese won’t spill out the sides.
- Carefully grasp the Dough under the Cheese log and roll it up until the very tip is tucked underneath.
- Place all rolled pastries on a tray lined with baking paper.
- Gently brush the tops of each rolled pastry with an Egg Yolk.
- Sprinkle Sesame or Nigella Seeds on top.
- Bake at 350oF for 25-30 minutes or until golden brown.
- This pastry is delicious served hot and steamy, but can also be served at room temperature. It can be saved in the refrigerator and warmed to serve as yummy left-overs too.

Should it be Rulo borek or Rolo borek? Just wondered… Looks delicious!

Good question. It is actually rulo börek. Rulo means roll or cylinder in Turkish. This börek is all rolled up in a cylinder shape as opposed to others which are flat, rose-shaped, etc. Really the myriad of börek choices are simply endless.
