Spinach Cake

Ingredients:

  • 3 ½ oz Fresh Spinach Leaves
  • 1 ½ c. Oil
  • 1 ½ c. Sugar
  • 4 Eggs
  • 1 ½ c. Milk
  • 3 ½ c. Flour
  • 1 ½ T. Vanilla
  • 2 T. Baking Powder
  • Powdered Sugar, optional garnish
  • Whipped Topping, optional garnish

 

Directions:

  1. Blend Spinach and Oil together to form a puree. Set aside.
  2. In a mixing bowl, whisk Sugar & Eggs until foamy (or beat with a high-speed mixer).
  3. Whisk in Spinach Puree and Milk.
  4. Stir in remaining 3 ingredients.
  5. Pour into a greased 9×13-inch baking dish.
  6. Bake at 340oF for about 45-50 minutes, until toothpick comes out clean.
  7. Allow the cake to cool completely, then cut into pieces.
  8. Garnish the top of each piece by either dusting with powdered sugar and/or a dollop of Whipped Cream.
