Spinach Cake
Ingredients:
- 3 ½ oz Fresh Spinach Leaves
- 1 ½ c. Oil
- 1 ½ c. Sugar
- 4 Eggs
- 1 ½ c. Milk
- 3 ½ c. Flour
- 1 ½ T. Vanilla
- 2 T. Baking Powder
- Powdered Sugar, optional garnish
- Whipped Topping, optional garnish
Directions:
- Blend Spinach and Oil together to form a puree. Set aside.
- In a mixing bowl, whisk Sugar & Eggs until foamy (or beat with a high-speed mixer).
- Whisk in Spinach Puree and Milk.
- Stir in remaining 3 ingredients.
- Pour into a greased 9×13-inch baking dish.
- Bake at 340oF for about 45-50 minutes, until toothpick comes out clean.
- Allow the cake to cool completely, then cut into pieces.
- Garnish the top of each piece by either dusting with powdered sugar and/or a dollop of Whipped Cream.
