Semolina Helva

  • ½ c. Butter
  • 2 T. Pine Nuts
  • 1 ½ c. Semolina
  • 1 ½ c. Water
  • 1 ½ c. Milk
  • 1 ½ c. Sugar
  • Cinnamon

  1. Melt Butter in a large pot.
  2. Add Pine Nuts and cook until slightly roasted.
  3. Add Semolina and cook for 15 minutes, stirring often.
  4. In a small pot mix Water, Milk & Sugar together as you heat it slowly. (It doesn’t need to reach boiling point but should be very warm.) Add a few dashes of cinnamon while it cooks.
  5. Slowly pour the Milk mixture into the pot with the Semolina, stirring continually. Continue cooking for 8-10 minutes.
  6. Helva can be served immediately or after it cools but should be served the same day. To serve a hearty portion use a small bowl, or for smaller portions a large ice cream scoop. Top with a sprinkle of cinnamon just before serving.
