Dried Beans with Meat
- 1 c. Dry Beans (Great Northern or Cannellini)
- Olive Oil
- 10 oz. Meat Chunks
- 1 Onion, diced
- 1 Green Pepper, diced
- 2 T. Tomato Paste
- ¾ tsp. Red Pepper Flakes
- Salt
- 5 c. Hot Water
- 1 Sugar Cube
- Soak the beans overnight in cool water. Next day: drain the beans, wash, drain again, set aside for cooking later.
- Cover bottom of pot with Oil. Add the Meat Chunks and cook until they start to brown.
- Add diced Onions and Green Pepper, sauté with the Meat until fully browned.
- Add the drained Beans and remaining ingredients. Stir well and bring to a boil.
- If using a pressure cooker it only takes about 20 minutes at this point. I used a normal soup pot so needed to cook everything almost an hour, stirring occasionally. If more liquid is needed during the cooking process, add up to one more cup water as needed.
- This Meat & Bean dish is delicious by itself served hot in a bowl, or on top of a bed of Rice Pilaf.

We were missing the dry beans you can order in Rize, Turkey and had never tried to make them ourselves. Special note about how many beans to use. We used pre-soaked beans and forgot that they grow 3-4 times and didn’t add enough beans at first. But when we added more beans–this dish was really delicious.
