Eggplant & Beef Medley
- 4 Eggplants
- 1 lb. Ground Beef
- 3 T. Olive Oil
- 2 Onions, diced
- 1 Green Bell Pepper, diced
- 2 cloves Garlic, crushed
- 2 Tomatoes, grated
- ½ tsp. Cumin
- ½ tsp. Red Pepper
- ½ tsp. Salt
- ¼ tsp. Black Pepper
- Oil for frying
- ½ c. Tomato Sauce
- Wash and strip peel Eggplants.
- Cut Eggplant into coins (about a finger width wide).
- Place coined Eggplants in a bowl of salt water and set aside for 20 minutes.
- Meanwhile, brown the Ground Beef.
- Add to the browned Beef, Oil, Onion, Pepper and Garlic.
- Stir together and cook for 5 minutes.
- Add the grated Tomatoes and Seasonings; stir well. Cover and simmer for 10 mins.
- Drain the Eggplant coins and discard salt water.
- In another frying pan, heat some Oil (any kind but olive oil) and add a layer of Eggplant coins. (Refer to video at the bottom of page for step-by-step instructions of steps 9-14.)
- Fry until both sides are golden brown. Continue doing this until all the Eggplant coins are browned.
- Place one layer of browned eggplants in the bottom of a glass baking dish. As you remove them from the frying pan, shake off excess Oil (any additional oil will just add a non-stick coating to your baking dish).
- After you have one layer of Eggplant coins in the baking dish, use a spoon or cookie baller to scoop the Meat mixture on each Eggplant coin.
- Once all the Eggplant coins have a layer of meat, put another layer of browned Eggplant coins on top to give each one a “cap.”
- Pour Tomato Sauce on top. (If desired, place extra slices of Tomatoes and/or Green Peppers on top of each piece for a beautiful and tasty garnish.)
- Bake at 350oF for 20-30 minutes, until bubbly.
- Garnish with Fresh Parsley. Serve immediately, alongside Rice Pilaf and Plain Yogurt.
