Easy Potato Salad with lemon & fresh mint
- 3-4 Potatoes
- A few fresh Mint Leaves, finely chopped
- 4 Spring Onions, finely chopped
- 1 Green Pepper (either spicy or sweet, your choice), finely chopped
- 1 Lemon, juiced
- 2 T. Olive Oil
- Salt to taste
- Red Pepper Flakes to taste
- Black Pepper to taste
- Peel and par-boil Potatoes, allow to cool.
- Cut cooled Potatoes into small cubes.
- Mix cubed Potatoes with chopped Mint, Onions & Peppers.
- Add remaining ingredients. Toss to mix.
- Refrigerate to fully chill before serving.

This dish has a unique flair to traditional American potato salad and I found that I actually prefer this.
