Shepherd’s Salad with cucumbers, tomatoes & feta
- 4 Tomatoes, diced
- 4 Seedless Cucumbers, diced
- 1 pointed Green Pepper (spicy or sweet), diced
- ½ bunch Green Onion, diced
- 1/3 bunch Flat-Leaf Parsley, finely chopped
- ¼ c. Olive Oil
- 1 Lemon, juiced
- Salt & Pepper to taste
- Feta Cheese
- Black Olives for garnish
- Mix Tomatoes, Cucumbers, Green Pepper & Green Onion.
- Toss in Parsley.
- Pour on Olive Oil and stir.
- Squeeze Lemon juice over mixture and stir.
- Stir in Salt & Pepper.
- Pour salad onto a nice serving platter.
- Add bits of Feta Cheese (for taste & looks).
- Garnish with Black Olives.

This is a great recipe but leftovers don’t last very long. If you’re looking for a different way to eat it you can make a quick and easy lettuce salad by simply putting this salad on a bed of lettuce. Add a bit more feta cheese and some crushed walnuts for a salad that will stick with you.
