Healthy Purslane Dish 

  • 1 bunch Purslane
  • Olive Oil
  • 1 Onion, diced
  • 2 T. Tomato Paste
  • 2 cloves Garlic, crushed
  • ½ tsp. Salt
  • ¼ c. Bulgur Wheat
  • 1 ¼ c. Hot Water
  • Thick-Style Plain Yogurt
  • Red Pepper Flakes

 

  1. Clean Purslane well (discard thickest stem, wash small stems and leaves). Set aside on paper towels to drip dry. (As I cleaned mine everything was in small enough pieces to add to the recipe later. If you want, feel free to chop them even smaller.)
  2. Sauté Onion in Olive Oil.
  3. Stir in Tomato Paste & Garlic.
  4. Add Purslane. Cook 3 minutes while stirring.
  5. Stir in Salt, Bulgur & Hot Water. Cover and cook, stirring occasionally. Simmer until soft (about 10 minutes). Add more water if necessary.
  6. This delicious and healthy side-dish is similar to cooked spinach or other greens so best served immediately while hot. It is most delicious served with Plain Yogurt scooped on top or to the side and sprinkled with Red Pepper Flakes.
