Fresh green peppers filled with meat, rice & spices
- 2 ½ lb small Green Bell Peppers
- 1 c. Rice, rinsed and drained for stuffing
- ½ lb Ground Beef for stuffing
- 1 Onion, finely chopped for stuffing
- 1 Tomato, diced for stuffing
- 1 tsp. Tomato Paste for stuffing
- ½ c. Olive Oil for stuffing
- 1 T. Salt for stuffing
- 1 tsp. Red Pepper Flakes for stuffing
- ½ tsp. Black Pepper for stuffing
- 1-2 cups Boiling Water
- 2 Tomatoes, sliced for toppers
- Wash the Peppers. Cut the tops off and remove seeds.
- In a bowl, mix all stuffing ingredients well.
- With a spoon carefully fill the peppers 2/3 full with the stuffing mixture.
- Place one slice of Tomato as a cap on top of each Pepper.
- In a large saucepan or pot, place the stuffed Peppers and add boiling Water, enough to almost cover half height of the peppers.
- Cook covered on low-medium heat, until the Peppers get soft and Rice is cooked, for about 20-30 minutes.
- Drain off liquid and serve hot with Plain Yogurt.

As of late I’ve found I’m not as particularly fond of stuffed peppers as I once was. However, this recipe was truly delicious and I wanted to eat all of them at once. 🙂
