Turkish Chocolate Coffee Cake 

Ingredients:

  • 2 Eggs
  • ½ c. Sugar
  • 1 ½ tsp. Vanilla
  • ¾ c. Flour
  • 3 heaping T. Cocoa
  • ½ tsp. Turkish Coffee (just the granules, not brewed)
  • 1 ½ tsp. Baking Powder
  • 2 T. Milk
  • 1 c. Milk for topping
  • ¼ c. Sugar for topping
  • ¼ tsp. Turkish Coffee for topping
  • 1 oz. Bittersweet Baker’s Chocolate

 

Directions:

  1. Beat Eggs and Sugar on high speed with mixer until frothy.
  2. Whisk in Vanilla.
  3. In separate bowl, mix together Flour, Cocoa, Turkish Coffee and Baking Powder, then whisk mixture into batter until just mixed.
  4. Mix in 2 T. Milk.
  5. Pour batter into a greased 8×8-inch baking dish.
  6. Bake at 350o for 20 minutes or until a toothpick inserted in the middle comes out clean.
  7. Allow the cake to cool for 10 minutes before cutting into 9 pieces.
  8. In a small pot over low heat whisk together Milk, Sugar and Coffee for topping until warm but not boiling.
  9. Cut up Chocolate and add to the mixture.
  10. Continue whisking over low heat until melted.
  11. Pour on top of cake.
  12. Allow to stand for at least half an hour so the topping soaks in completely, then it is ready to serve or you can refrigerate to serve later.

Step 11: Pouring Chocolate liquid on top of baked cake
