Zucchini & Carrot Pastry
Ingredients:
- 8 oz. Phyllo Dough, thawed
- 2 c. Milk
- ½ c. Butter, melted
- 3 Eggs
- 2 c. Squash or Zucchini, shredded
- 2 Carrots, shredded
- 1 c. Feta Cheese
- ½ bunch Fresh Dill, minced
- ½ tsp. Red Pepper Flakes
- 1 tsp. Salt
- ¼ tsp. Black Pepper
- Sesame Seeds and/or Black Sesame Seeds for garnishing the top
Directions:
- Set Eggs & Milk out to warm up to room temperature. (If used cold, the melted butter will congeal when added to these ingredients causing the sauce to not blend correctly.)
- Place shredded Zucchini in a colander and allow to stand for until needed. Squeeze extra liquid out of grated Zucchini before adding to the dish.
- Whisk together Eggs, Butter, and Milk. Set aside.
- Grease the bottom of a glass 9×13-inch pan with Oil.
- Layer 4 sheets of Phyllo Dough flat into the pan.
- Take the next 3 sheets of Dough and scrunch them up as you individually place them on top of the flat layer of dough. (This will give depth to your pastry. Make sure each area of the pan is covered well will the scrunched-up dough.)
- Gently layer another sheet of Phyllo Dough flat on top of the scrunched ones.
- Sprinkle the Zucchini and Carrots on top of the flat layer of dough.
- Next, crumble the Feta Cheese on top of the vegetables.
- Sprinkle Dill on top of Cheese.
- Combine all Seasonings and sprinkle on top of the cheese veggie layer. (This recipe is essentially a mirror image and the cheese/veggie layer is the center point. So basically, the next 2 steps are an exact repeat of what you have already done.)
- Gently layer 1 more sheet of Dough flat on top of the cheese /veggie layer.
- Take 3 more sheets of Dough and scrunch them up as you individually place them on top of the cheese/veggie layer.
- Open 4 final sheets of Dough and layer them flat on top. (If there happen to be extra sheets of dough, just add them.)
- Use a sharp knife to cut into pieces (typically 15 per dish).
- Pour Milk/Egg mixture on top of börek.
- Allow börek to stand on counter for 2 hours (allowing the dough to soak up most of the sauce).
- Sprinkle sesame seeds on top.
- Bake at 350oF for 50-60 minutes until top is golden brown.
- Upon removing from oven, serve immediately as it tastes best hot.
