Rice Pilaf with Vegetables
- 2 T. Olive Oil
- 2 T. Butter
- 1 ½ c. Rice, rinsed well
- Lemon Juice (few drops)
- ½ tsp. Salt
- 3 c. Hot Water
- 1 Chicken Bullion Cube*
- ½ c. Carrots, diced
- ½ c. Corn, drained
- ½ c. Peas
* Vegetarian option: don’t add the bullion cube. It will still be delicious!
- Melt Olive Oil and Butter together in a pot.
- Stir in rinsed Rice (be careful as the water may cause the oil to pop and splatter). Stir constantly and sauté for a long time (until Rice begins to turn a deeper white).
- Add a few drops of Lemon Juice and Salt.
- Pour in Hot Water & Bullion Cube. Mix well.
- Stir in vegetables. Cover and cook until Rice is soft, about 20 minutes. Every 8 minutes or so remove the lid and stir, making sure to scrap the bottom well so it doesn’t stick and burn.
- Once everything is cooked well, place a paper towel between the pot and lid then turn off the heat. Allow to sit for 5 minutes. The paper towel will absorb some of the steam and help your pilaf to be nice and flaky, instead of all clumped together.
* This pilaf is great served with the Sebzeli Güveç for a super healthy meal with lots of vegetables. It is also a nice side dish for meat and chicken.
